Creme Brulee

Ingredients:
1) Cream 200 gm
2) Milk 100 gm
3) Sugar 75 gm
4) Yolk 7 nos
5) Vanilla

Method:
1) in a pot / pan ... warm over medium heat ... do not boil ... Cream, Milk ... 1/2 amount of Sugar ... put aside for use

2) separate Egg Yolk from Egg White with gloved hands ... in a mixing bowl ... whisk Egg Yolks ... with 1/2 amount of sugar

3) add warmed Milk Cream ... whisking at the same time ... sieve to remove foam

4) filled Remekins with ... place in baking tray with water in tray ... same level as filling in the Remekins

5) poach bake in oven for 1 hour ... 150*C ...

6) sprinkle sugar over surface of Creme Brulee ... remove excess sugar ... clean edges around Remekin

7) touch surface ... brown evenly ... chill serve cold
